Ingredients
- 300 gr (10 oz) taro cubes
- 125 ml (1/2 cup) coconut cream
- 300 gr (10 oz) sugar
- 1 pinch of salt.
- 30 ml (2 tbsp) coconut, grated and sweetened
- 2 sheets of puff pastry, cut into 4'' diameter circles
- qs icing sugar
Preparation
- Preheat the oil in the fryer to 190 °C (375 °F).
- In a saucepan of boiling water, cook the taro cubes for 10 minutes.
- Remove, drain and puree the cubes.
- In a saucepan over medium heat, add the puree obtained and, using a spatula, incorporate the coconut cream and sugar. Mix until you get a thick, pasty mixture.
- Incorporate the salt and coconut and leave to cool.
- In the center of each circle of puff pastry, spread the mixture. Then close the edges to form a ballotin.
- In the hot oil of the fryer, dip the bites and leave to cook and brown.
- Sprinkle with icing sugar and enjoy
