Roasted filet mignon and sautéed chickpeas

Ingredients

Pork

  • 4 Quebec pork tenderloin steaks
  • 5 ml (1 tsp) ground coffee
  • 2 cloves garlic, minced
  • 30 ml (2 tbsp) maple syrup or honey
  • 60 ml (4 tbsp) sour cream
  • Salt and pepper to taste

Sautéed chickpeas

  • 8 slices bacon, chopped
  • 1 L (4 cups) chickpeas
  • 15 ml (1 tbsp) tomato paste
  • 1 leek, thinly sliced
  • 2 cloves garlic, minced
  • 1 L (4 cups) spinach leaves
  • Salt and pepper to taste

Preparation

  1. Preheat the oven, rack in the middle, to 200 °C (400 °F).
  2. In a bowl, mix the coffee, garlic and maple syrup.
  3. Salt and pepper then coat the fillet steaks with the prepared mixture.
  4. On a baking sheet, arrange the steaks and cook in the oven for 15 to 20 minutes, depending on the desired doneness.
  5. In the meantime, in a hot pan, brown the bacon for 2 to 3 minutes.
  6. Add the chickpeas, tomato paste, garlic, leek, spinach and cook for 5 to 6 minutes over medium heat. Check the seasoning.
  7. On each plate, divide the prepared vegetables, pork steaks and sour cream.
