Ingredients
- 6 eggs
- 125 ml (1/2 cup) milk
- 60 ml (4 tbsp.) chives, minced
- 125 ml (1/2 cup) grated Parmesan cheese
- 125 ml (1/2 cup) sour cream
- 8 slices smoked salmon
- 250 ml (1 cup) arugula
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 190°C (375°F).
- In a bowl, whisk together eggs, milk, chives, salt and pepper.
- Pour the mixture onto a baking sheet lined with a silicone mat or parchment paper and bake for 10 to 15 minutes, until the omelet is cooked through.
- Allow to cool. Check seasoning.
- Spread the Parmesan, sour cream, salmon and arugula over the omelette.
- Roll the omelette on itself to form a neat roll.
- Plant wooden skewers at regular intervals, then cut into omelette sections.
- Serve, garnished with fresh herbs or micro-sprouts.
