Smoked salmon omelette roll

Cooking time : 10 to 15 minutes

Ingredients

  • 6 eggs
  • 125 ml (1/2 cup) milk
  • 60 ml (4 tbsp.) chives, minced
  • 125 ml (1/2 cup) grated Parmesan cheese
  • 125 ml (1/2 cup) sour cream
  • 8 slices smoked salmon
  • 250 ml (1 cup) arugula
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. In a bowl, whisk together eggs, milk, chives, salt and pepper.
  3. Pour the mixture onto a baking sheet lined with a silicone mat or parchment paper and bake for 10 to 15 minutes, until the omelet is cooked through.
  4. Allow to cool. Check seasoning.
  5. Spread the Parmesan, sour cream, salmon and arugula over the omelette.
  6. Roll the omelette on itself to form a neat roll.
  7. Plant wooden skewers at regular intervals, then cut into omelette sections.
  8. Serve, garnished with fresh herbs or micro-sprouts.
