Papas rellenas

Ingredients

  • 450 g (16 oz) ground beef
  • 2 onions, chopped
  • 60 ml (4 tbsp.) canola oil
  • 750 ml (3 cups) Bintje or Yukon Gold mashed potatoes
  • 15 ml (1 tbsp.) flour
  • 15 ml (1 tbsp) cumin seeds, ground
  • 5 ml (1 tsp.) dried oregano
  • 15 ml (1 tbsp.) pink pepper, cracked
  • 2 garlic cloves, chopped
  • 2 tomatoes, diced
  • 125 ml (1/2 cup) raisins
  • salt and freshly ground pepper to taste
  • Oil for frying

Breadcrumbs

  • 250 ml (1 cup) flour
  • 3 eggs, beaten
  • 500 ml (2 cups) breadcrumbs

Preparation

  1. In a hot skillet, brown meat and onions in oil for 5 minutes.
  2. Add cumin, oregano, pink pepper, garlic and raisins and cook over low heat for 15 minutes. Check seasoning. Leave to cool.
  3. Meanwhile, mix flour and mashed potatoes in a bowl. Check seasoning.
  4. Using 2 tbsp. worth of mashed potatoes, shape into balls.
  5. Flatten balls into disks.
  6. Place a small amount of cold meat mixture in the center of each disk. Fold over the edges of each disc to form a ball.
  7. For the breadcrumbs, prepare three bowls: one with flour, one with beaten eggs and one with breadcrumbs.
  8. Roll each ball in the flour, then in the beaten eggs, then in the breadcrumbs.
  9. In a hot frying pan containing 1” oil, brown the balls. Remove and set aside on absorbent paper.
