Ingredients
- 450 g (16 oz) ground beef
- 2 onions, chopped
- 60 ml (4 tbsp.) canola oil
- 750 ml (3 cups) Bintje or Yukon Gold mashed potatoes
- 15 ml (1 tbsp.) flour
- 15 ml (1 tbsp) cumin seeds, ground
- 5 ml (1 tsp.) dried oregano
- 15 ml (1 tbsp.) pink pepper, cracked
- 2 garlic cloves, chopped
- 2 tomatoes, diced
- 125 ml (1/2 cup) raisins
- salt and freshly ground pepper to taste
- Oil for frying
Breadcrumbs
- 250 ml (1 cup) flour
- 3 eggs, beaten
- 500 ml (2 cups) breadcrumbs
Preparation
- In a hot skillet, brown meat and onions in oil for 5 minutes.
- Add cumin, oregano, pink pepper, garlic and raisins and cook over low heat for 15 minutes. Check seasoning. Leave to cool.
- Meanwhile, mix flour and mashed potatoes in a bowl. Check seasoning.
- Using 2 tbsp. worth of mashed potatoes, shape into balls.
- Flatten balls into disks.
- Place a small amount of cold meat mixture in the center of each disk. Fold over the edges of each disc to form a ball.
- For the breadcrumbs, prepare three bowls: one with flour, one with beaten eggs and one with breadcrumbs.
- Roll each ball in the flour, then in the beaten eggs, then in the breadcrumbs.
- In a hot frying pan containing 1” oil, brown the balls. Remove and set aside on absorbent paper.
