Ingredients
- 4 peach halves in syrup, drained
- 30 ml (2 tablespoons) butter
- 125 ml (1/2 cup) schnapps
- 125 ml (1/2 cup) flour
- 2 eggs
- 250 ml (1 cup) butter cookies, crushed
- 250 ml (1 cup) Urda cheese
- 60 ml (4 tbsp.) cinnamon
- 1 ml (1/4 tsp.) ginger, powdered
- 1 ml (1/4 tsp.) nutmeg, ground
- 1 pinch cloves
- 1 pinch salt
- 120 ml (8 tbsp.) cranberry jam
- 4 meringues
Preparation
- Preheat fryer oil to 180°C (350°F).
- In a hot frying pan, sear the peaches in the butter for 2 minutes on each side.
- Add the schnapps and flambé. Allow to cool.
- Arrange 3 bowls, one containing the flour, another the beaten eggs and the last the crushed cookies.
- Dip the peaches in the flour, then in the beaten eggs, then in the cookie crumbs.
- Dip the peaches in the hot oil and cook for 1-2 minutes.
- In a bowl, combine Urda cheese, cinnamon, ginger, nutmeg, cloves, salt and 60 ml (4 tbsp.) cranberry jam.
- On each plate, spread a line of the prepared mixture, place 1 half-peach, a tablespoon of jam and a meringue to decorate.
