Yassa chicken

YASSA CHICKEN

Portions : 4 - Preparation time : 10 minutes - Marinade time : 12 to 24 hours - Cooking time : about 40 minutes

Ingredients

  • 8 to 12 chicken drumsticks
  • 4 limes, juice removed
  • 2 garlic cloves, minced
  • 5 ml (1 tsp.) chili flakes
  • 1 bay leaf
  • 90 ml (6 tbsp.) strong mustard
  • 3 (1+2) onions, thinly sliced
  • 2 green peppers, cut into strips
  • 1 poultry stock cube or 500 ml (2 cups) liquid broth
  • 90 ml (6 tbsp) cooking oil
  • salt and pepper to taste

Preparation

  1. In a bowl, combine lime juice, garlic, chili flakes, bay leaf and mustard.
  2. Add the drumsticks, one of the onions, salt and pepper, cover and marinate for 12 to 24 hours in the refrigerator.
  3. Remove the drumsticks from the marinade.
  4. In a hot frying pan, brown the chicken drumsticks in a little oil for 3 to 4 minutes on each side, then continue cooking over low heat for 6 to 7 minutes.
  5. Add the remaining onions, green peppers, broth, remaining marinade and 500 ml (2 cups) water and cook over medium heat for 20 minutes, stirring occasionally.
  6. Reduce the liquid, over high heat if necessary, to obtain a mixture of juicy onions but no liquid, and remove the bay leaf. Check seasoning.
  7. Serve with rice or semolina.
