YASSA CHICKEN
Portions : 4 - Preparation time : 10 minutes - Marinade time : 12 to 24 hours - Cooking time : about 40 minutes
Ingredients
- 8 to 12 chicken drumsticks
- 4 limes, juice removed
- 2 garlic cloves, minced
- 5 ml (1 tsp.) chili flakes
- 1 bay leaf
- 90 ml (6 tbsp.) strong mustard
- 3 (1+2) onions, thinly sliced
- 2 green peppers, cut into strips
- 1 poultry stock cube or 500 ml (2 cups) liquid broth
- 90 ml (6 tbsp) cooking oil
- salt and pepper to taste
Preparation
- In a bowl, combine lime juice, garlic, chili flakes, bay leaf and mustard.
- Add the drumsticks, one of the onions, salt and pepper, cover and marinate for 12 to 24 hours in the refrigerator.
- Remove the drumsticks from the marinade.
- In a hot frying pan, brown the chicken drumsticks in a little oil for 3 to 4 minutes on each side, then continue cooking over low heat for 6 to 7 minutes.
- Add the remaining onions, green peppers, broth, remaining marinade and 500 ml (2 cups) water and cook over medium heat for 20 minutes, stirring occasionally.
- Reduce the liquid, over high heat if necessary, to obtain a mixture of juicy onions but no liquid, and remove the bay leaf. Check seasoning.
- Serve with rice or semolina.
