Coconut sorbet

Output: 1 l (4 cups) - Preparation time: 120 minutes - Standing time: 4 hours

Ingredients

  • 180 ml (3/4 cup) coconut milk
  • 500 ml (2 cups) water
  • 250 ml (1 cup) condensed milk
  • 60 ml (4 tablespoons) rum or coconut rum
  • 1 lime, zest
  • 1 pinch cinnamon powder
  • 1 pinch salt
  • Qs grilled pineapple slices

Preparation

  • Whisk together coconut milk, water, condensed milk, rum, lime zest, cinnamon and salt in a bowl. Refrigerate for 4 hours.
  • Use an ice-cream maker to make sorbet.
  • Otherwise, freeze for 30 minutes, whisk, return to the freezer for 30 minutes, whisk again, freeze for 1 hour, then whisk one last time before returning to the freezer.
  • Serve with pineapple slices.
