Ingredients
- 1 tube of Salmon Duo (fresh and smoked salmon)
- 1 bag of citrus vinaigrette (contained in the can)
- 1 shallot, finely chopped
- 1 avocado, sliced
- 1 orange, supreme
- ¼ fennel, sliced
- 250 ml (1 cup) arugula
- Salt and pepper to taste
- Accompaniments
- 4 slices brioche bread
- Homemade vinaigrette (oil, mustard, salt and pepper)
Preparation
- Butter and cut each slice of brioche into a rectangle.
- In a hot frying pan, brown the brioche bread on both sides. Leave to cool.
- Meanwhile, in a bowl, combine the two salmon tartars, citrus vinaigrette and shallot. Check seasoning.
- In a bowl, mix arugula, fennel strips, a little olive oil and hot mustard. Check seasoning.
- On each plate, alternate slices of avocado with orange segments, place a rectangle of brioche bread on top, followed by the tartare and salad (if possible, use a cookie cutter in the shape of your choice).
