Two-salmon tartare

Ingredients

  • 1 tube of Salmon Duo (fresh and smoked salmon)
  • 1 bag of citrus vinaigrette (contained in the can)
  • 1 shallot, finely chopped
  • 1 avocado, sliced
  • 1 orange, supreme
  • ¼ fennel, sliced
  • 250 ml (1 cup) arugula
  • Salt and pepper to taste
  • Accompaniments
  • 4 slices brioche bread
  • Homemade vinaigrette (oil, mustard, salt and pepper)

Preparation

  1. Butter and cut each slice of brioche into a rectangle.
  2. In a hot frying pan, brown the brioche bread on both sides. Leave to cool.
  3. Meanwhile, in a bowl, combine the two salmon tartars, citrus vinaigrette and shallot. Check seasoning.
  4. In a bowl, mix arugula, fennel strips, a little olive oil and hot mustard. Check seasoning.
  5. On each plate, alternate slices of avocado with orange segments, place a rectangle of brioche bread on top, followed by the tartare and salad (if possible, use a cookie cutter in the shape of your choice).
