Ingredients
- 1 tube of Salmon Duo (fresh salmon and smoked salmon)
- 1/2 grapefruit, peeled and cut into small pieces
- 4 radishes, thinly sliced
- 15 ml (1 tbsp) grapefruit juice (or lemon)
- 15 ml (1 tbsp) olive oil
- 1 tbsp mayonnaise
- 1 tsp honey
- 1 tbsp chives or fresh coriander, chopped
- Salt and pepper, to taste
- A handful of arugula
- 15 ml (1 tbsp) olive oil for the arugula
- 15 ml (1 tbsp) white wine vinegar for the arugula
Preparation
- Empty the tube of Salmon Duo into a bowl. Add grapefruit pieces and radish slices.
- In a small bowl, mix mayonnaise with grapefruit juice, olive oil and honey. Add this mixture to salmon and vegetables to bind tartare.
- Fold in chopped chives or coriander. Season with salt and pepper, to taste. Toss gently to coat all ingredients.
- In another bowl, toss arugula with 15 ml (1 tbsp) olive oil and 15 ml (1 tbsp) white wine vinegar. Season lightly with salt and pepper.
- Serve tartare chilled, topping with a little seasoned arugula.
