Salmon duo tartare with grapefruit, radish and rocket

Ingredients

  • 1 tube of Salmon Duo (fresh salmon and smoked salmon)
  • 1/2 grapefruit, peeled and cut into small pieces
  • 4 radishes, thinly sliced
  • 15 ml (1 tbsp) grapefruit juice (or lemon)
  • 15 ml (1 tbsp) olive oil
  • 1 tbsp mayonnaise
  • 1 tsp honey
  • 1 tbsp chives or fresh coriander, chopped
  • Salt and pepper, to taste
  • A handful of arugula
  • 15 ml (1 tbsp) olive oil for the arugula
  • 15 ml (1 tbsp) white wine vinegar for the arugula

Preparation

  1. Empty the tube of Salmon Duo into a bowl. Add grapefruit pieces and radish slices.
  2. In a small bowl, mix mayonnaise with grapefruit juice, olive oil and honey. Add this mixture to salmon and vegetables to bind tartare.
  3. Fold in chopped chives or coriander. Season with salt and pepper, to taste. Toss gently to coat all ingredients.
  4. In another bowl, toss arugula with 15 ml (1 tbsp) olive oil and 15 ml (1 tbsp) white wine vinegar. Season lightly with salt and pepper.
  5. Serve tartare chilled, topping with a little seasoned arugula.
