Salmon duo tartare with citrus fruits and pink berries

Tartare de duo de saumon aux agrumes et baies roses

Ingredients

  • 1 tube of Salmon Duo (fresh salmon and smoked salmon)
  • 1 orange, peeled and cut into small pieces
  • 1/2 grapefruit, peeled and cut into small pieces
  • 15 ml (1 tbsp) lemon or lime juice
  • 15 ml (1 tbsp) olive oil
  • 1 tbsp crushed pink peppercorns
  • 1 tbsp fresh chives or coriander, chopped
  • Salt, to taste

Preparation

  1. Empty the tube of Salmon Duo into a bowl. Add the orange and grapefruit pieces.
  2. Add the lemon juice and olive oil. Mix gently to coat the salmon and citrus fruits.
  3. Add the crushed pink peppercorns and the chives or chopped fresh coriander. Season with salt, to taste.
  4. Leave to rest in the refrigerator for 10 minutes to allow the flavors to blend.
  5. Serve chilled with toast, crackers or as a starter on a bed of salad.
