CAULIFLOWER WINGS
Portions : 4 - Preparation time : 15 minutes - Cooking time : about 15 to 20 minutes
Ingredients
- 125 ml (1/2 cup) flour
 - 90 ml (6 tablespoons) cornstarch
 - 250 ml (1 cup) cold lager
 - 3 ml (1/2 tsp.) baking powder
 - 5 ml (1 tsp.) mild smoked paprika
 - 5 ml (1 tsp.) dried thyme
 - 5 ml (1 tsp.) garlic powder
 - 5 ml (1 tsp.) onion powder
 - 1 cauliflower, cut into florets
 - Salt and pepper to taste
 
Sauce
- 60 ml (4 tbsp.) ketchup
 - 125 ml (1/2 cup) water
 - 15 to 30 ml (1 to 2 tbsp.) Sambal Oelek (to taste)
 - 60 ml (4 tbsp.) brown sugar
 - 45 ml (3 tbsp.) soy sauce
 - 60 ml (4 tbsp.) white vinegar
 - 30 ml (2 tbsp) cornstarch, diluted in a little cold water
 
Preparation
- Preheat fryer oil to 190°C (375°F).
 - In a bowl, whisk together flour, cornstarch, beer and baking powder until smooth.
 - Stir in paprika, thyme, garlic and onion powder, salt and pepper.
 - Add the cauliflower pieces to the mixture, to coat.
 - Using tongs, place the cauliflower in the oil of the deep fryer, piece by piece, and cook until golden-brown, about 3 minutes.
 - Remove the cauliflower pieces as you go, and sprinkle with a little salt.
 - In a saucepan over medium heat, reduce the ketchup, water, hot sauce, sugar, soy sauce and vinegar by half while stirring.
 - Stir in diluted cornstarch and allow sauce to thicken at a simmer.
 - Serve cauliflower wings with prepared sauce.
