HEALTHY AND TENDER BAR
Output: 20 - Preparation time: 15 minutes - Cooking time: 20 to 25 minutes
Ingredients
- 125 ml (1/2 cup) grated coconut
 - 2 eggs
 - 60 ml (1/4 cup) vegetable oil
 - 60 ml (1/4 cup) honey
 - 500 ml (2 cups) puffed rice
 - 250 ml (1 cup) quick-cooking rolled oats (oatmeal)
 - 60 ml (1/4 cup) almonds, sliced
 - 60 ml (1/4 cup) cashews, crushed
 - 60 ml (1/4 cup) flax seeds, ground
 - 60 ml (1/4 cup) cranberries, chopped
 - 60 ml (1/4 cup) dried apricots, chopped
 - 1 pinch salt
 - Dark chocolate chips (optional)
 
Preparation
- In a hot frying pan, toast the shredded coconut until golden brown.
 - Preheat oven, rack in center, to 180° C (350° F).
 - Whisk the eggs in a bowl. Add oil and honey.
 - Add all the other ingredients to the bowl and mix with a spatula.
 - Pour the mixture into the molds of your choice, or onto a baking tray, and bake for 20 to 25 minutes, depending on the size of the bars.
 - Leave to cool before serving.
