Dubai-Style Filled Donuts

Ingredients

  • 500 ml (2 cups) flour
  • 60 ml (1/4 cup) sugar
  • 10 ml (2 teaspoons) instant yeast
  • 125 ml (1/2 cup) warm milk
  • 60 ml (1/4 cup) melted butter
  • 1 egg
  • 15 ml (1 tablespoon) vanilla extract
  • Oil for frying

Dubai-style filling

  • 250 ml (1 cup) melted milk chocolate
  • 125 ml (1/2 cup) melted dark chocolate
  • 125 ml (1/2 cup) chopped pistachios
  • 250 ml (1 cup) toasted crispy kataifi pastry


Preparation

  1. Preheat the frying oil to 350°F.
  2. Combine the flour, sugar, and yeast in a bowl.
  3. Add the milk, melted butter, egg, and vanilla, then mix until a soft dough forms.
  4. Knead for a few minutes until the dough is smooth and elastic.
  5. Cover and let rise for about 1 hour or until the dough has doubled in size.
  6. Roll out the dough on a floured surface, then cut out the doughnuts.
  7. Let rest for 20 minutes. Fry the doughnuts for 2 to 3 minutes on each side at 350°F or until golden brown, then place on paper towels.
  8. Dip the tops of the doughnuts in milk chocolate, then drizzle with dark chocolate.
  9. Garnish generously with chopped pistachios and crispy toasted kataifi pastry to recreate the effect of the famous Dubai chocolate.
