VIETNAMESE-STYLE GRILLED BEEF
Portions :4 - Preparation : 10 to 15 minutes - Cooking : 4 to 6 minutes
Ingredients
- 450gr (1 lb) inside round of beef
 - 1 lime, juice
 - 45 ml (3 tablespoons) fish sauce
 - 30 ml (2 tbsp.) honey or sugar
 - 15 ml (1 tbsp.) soy sauce
 - 3 ml (1/2 tsp.) white pepper, ground
 - 1 pinch cinnamon, ground
 - 5 ml (1 tsp.) lemongrass, chopped
 - 2 garlic cloves, chopped
 - 8 ml (1/2 tbsp.) hot sauce (Sambal Oelek or Sriracha)
 - 30 ml (2 tbsp.) canola oil
 
Topping
- 250 ml (1 cup) carrot, julienned
 - 250 ml (1 cup) daikon, julienned
 - 15 mL (1 tbsp.) sugar
 - 60 ml (4 tbsp.) rice vinegar
 - 4 portions rice vermicelli, cooked
 - 60 ml (4 tbsp.) coriander leaves, chopped
 - 8 mint leaves
 - 60 ml (4 tbsp.) peanuts, chopped
 - Salt and pepper to taste
 
Preparation
- Preheat barbecue to maximum.
 - Cut beef into thin slices.
 - In a bowl, combine meat slices, lime juice, fish sauce, honey, soy sauce, white pepper, cinnamon, lemongrass, garlic, hot sauce, oil and marinate for a few minutes.
 - On the barbecue grill, sear the meat for 2 to 3 minutes on each side.
 - In a bowl, combine the carrot, daikon, sugar, rice vinegar, salt and pepper.
 - Divide the cooked rice noodles, seasoned vegetables and grilled meat between the bowls, and sprinkle the coriander, mint and peanuts over the top.
