Ingredients
- 300 ml (1 ¼ cups) strawberry protein yogurt
- 125 ml (½ cup) cream cheese, softened
- 170 ml (1 container) fresh blueberries
- 15 ml (1 tbsp) honey
- 1 pinch of salt
- 60 ml (¼ cup) crumbled graham crackers
- Additional honey, for serving
Preparation
- In a small skillet, sauté the blueberries with the honey and a pinch of salt for 2 to 3 minutes, just until they begin to burst slightly. Remove from heat and let cool completely.
- In a bowl, whip the cream cheese until smooth. Add the protein yogurt and mix until well combined.
- Spoon a small amount of the cream cheese mixture into the bottom of silicone mini muffin cups.
- Add a little of the blueberry compote, then sprinkle with crumbled graham crackers.
- Top with another thin layer of the cream cheese mixture and lightly smooth the surface.
- Place in the freezer for about 3 hours or until the bites are firm.
- Unmold just before serving. Let sit at room temperature for 2 to 3 minutes before enjoying for a creamier texture.
- Finish with a light drizzle of honey just before serving.
