Ingredients

  • 250 ml (1 cup) grated carrot
  • 250 ml (1 cup) grated daikon
  • 125 ml (1/2 cup) white vinegar
  • 60 ml (4 tbsp) sugar
  • 5 ml (1 tsp) salt
  • 454 g (1 lb) ground pork
  • 4 burger buns
  • 125 ml (1/2 cup) mayonnaise
  • 4 lettuce leaves
  • 125 ml (1/2 cup) fresh cilantro leaves
  • Pepper to taste

Vietnamese glaze

  • 60 ml (4 tbsp) honey
  • 60 ml (4 tbsp) hoisin sauce
  • 2 cloves garlic
  • 15 ml (1 tbsp) chopped lemongrass
  • 15 ml (1 tbsp) chopped ginger

Preparation

  1. In a bowl, combine the carrot, daikon, vinegar, sugar, and salt, and let marinate while you prepare the rest of the recipe.
  2. For the glaze, in a bowl, combine the honey, hoisin sauce, garlic, lemongrass, and ginger.
  3. Shape the ground pork into 4 fairly thin patties and season with pepper to taste.
  4. Lightly toast the burger buns for 30 to 45 seconds.
  5. On the grill or in a hot skillet, cook the pork patties for 3 to 4 minutes on each side, or until the meat is fully cooked. Halfway through cooking, generously brush the patties with the glaze to caramelize them.
  6. Spread mayonnaise on each bun, then layer with lettuce, the glazed pork patties, the marinated vegetables, and fresh cilantro.
  7. Close the buns and serve immediately.
