BRUSSELS SPROUTS CAESAR
Portions : 4 - Preparation time : 15 minutes - Cooking time : about 20 minutes
Ingredients
- 125 ml (1/2 cup) olive oil
- 2 garlic cloves, minced
- 5 ml (1 teaspoon) dried oregano
- 2 anchovies, crushed
- 60 ml (4 tbsp.) honey
- 16 to 24 Brussels sprouts, halved
- 500 ml (2 cups) dry bread, cubed
- 1 chicken breast, cut into strips
- 60 ml (4 tbsp.) Caesar dressing
- 60 ml (4 tbsp.) grated Parmesan cheese
- Salt and pepper to taste
Preparation
- Preheat barbecue to maximum heat
- In a bowl, combine olive oil, garlic, oregano, anchovies and honey. Check seasoning.
- In another bowl, combine Brussels sprouts, dry bread cubes and 3/4 of the prepared flavored oil mixture.
- In a bowl containing the chicken strips, add the remaining flavored oil and toss.
- Grill the Brussels sprouts and chicken on a barbecue mat for 4 to 5 minutes on each side. Continue cooking over indirect heat, lid closed, for 8 minutes.
- Allow to cool.
- In a salad bowl, combine croutons, Brussels sprouts, chicken, Caesar dressing and sprinkle with grated Parmesan, before serving.
