Vegan Creton

VEGAN CRETON

Portions : 4 - Preparation : 5 minutes - Cooking : 10 minutes

Ingredients

  • 1 onion, finely chopped
  • 60 ml (4 tablespoons) olive oil
  • 1 garlic clove, minced
  • 5 ml (1 tsp.) nutmeg, ground
  • 5 ml (1 tsp.) cinnamon, ground
  • 1 pinch cloves
  • 1 bay leaf
  • 125 ml (1/2 cup) firm tofu, cubed
  • 125 ml (1/2 cup) cooked brown lentils (canned)
  • 60 ml (4 tablespoons) breadcrumbs
  • 500 ml (2 cups) vegetable broth
  • salt and pepper to taste

Preparation

  1. In a hot skillet, brown the onion in a little oil for 3 to 4 minutes.
  2. Add garlic, nutmeg, cinnamon, cloves, bay leaf, tofu, lentils and broth and reduce over low heat. Mash, if necessary, with a fork. Check seasoning.
  3. Fill a terrine container and refrigerate.
