Tomato and sardine crisps

Croustillants tomate sardine

Ingredients

  • 2 Artesano Roasted Garlic Baguettes
  • 8 sardine fillets in oil
  • 2 vine tomatoes
  • 1 teaspoon (5 ml) herbes de Provence
  • 1 shallot, finely chopped
  • 1 teaspoon (5 ml) sugar
  • 60 ml (4 tbsp) olive oil
  • 30 ml (2 tbsp) basil leaves, chopped
  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 375°F (190°C) with the rack in the middle position.
  2. Cut the tomatoes into quarters and remove the seeds, keeping only the flesh.
  3. In a bowl, combine the tomatoes, herbes de Provence, shallot, sugar, oil, and a little salt and pepper.
  4. Spread the mixture on a baking sheet lined with parchment paper or a silicone mat and bake for 15 to 20 minutes.
  5. Bake the baguettes according to the instructions on the package.
  6. Slice each loaf in half lengthwise to make 4 slices.
  7. Spread the warm sun-dried tomatoes, sardines, and fresh basil on each slice of bread.
