Ingredients
- 2 Artesano Roasted Garlic Baguettes
- 8 sardine fillets in oil
- 2 vine tomatoes
- 1 teaspoon (5 ml) herbes de Provence
- 1 shallot, finely chopped
- 1 teaspoon (5 ml) sugar
- 60 ml (4 tbsp) olive oil
- 30 ml (2 tbsp) basil leaves, chopped
- Salt and pepper to taste
Preparation
- Preheat the oven to 375°F (190°C) with the rack in the middle position.
- Cut the tomatoes into quarters and remove the seeds, keeping only the flesh.
- In a bowl, combine the tomatoes, herbes de Provence, shallot, sugar, oil, and a little salt and pepper.
- Spread the mixture on a baking sheet lined with parchment paper or a silicone mat and bake for 15 to 20 minutes.
- Bake the baguettes according to the instructions on the package.
- Slice each loaf in half lengthwise to make 4 slices.
- Spread the warm sun-dried tomatoes, sardines, and fresh basil on each slice of bread.
