Ingredients
- 2 Artesano Baguettes Roasted Garlic
- 1 bag of mussels, cleaned
- 1 cup (250 ml) white wine
- 2 tablespoons (30 ml) ginger, chopped
- 1 mango, finely diced
- 2.4 fl oz (4 tbsp) cilantro leaves, chopped
- 2.4 fl oz (4 tbsp) red onion, finely chopped
- 2.4 fl oz (4 tbsp) olive oil
- 1 lemon, juiced
- 2.4 fl oz (4 tbsp) butter
- Salt and pepper to taste
Preparation
- In a covered saucepan, cook the mussels in the white wine and ginger for 8 minutes. Stir and let cool.
- Remove and shell the mussels, keeping only the meat.
- Meanwhile, in a bowl, combine the mango, cilantro, red onion, olive oil, lemon juice, and a little salt and pepper. Check the seasoning.
- Cut the baguettes into large pieces 1" thick.
- Spread butter on both sides of each piece of bread.
- In a hot skillet, brown the pieces of bread for 1 to 2 minutes on each side.
- Arrange the pieces of bread on a serving platter, top each with mussels and then the mango mixture.
