PROVENÇAL-STYLE ROASTED SEA BREAM

Ingredients

  • 4 to 8 grey or king bream fillets
  • 120 ml (8 tbsp.) olive oil
  • 1 onion, thinly sliced
  • 500 ml (2 cups) green beans
  • 250 ml (1 cup) black olives
  • 15 ml (1 tbsp.) herbes de Provence blend
  • 2 garlic cloves, chopped
  • 125 ml (½ cup) white wine
  • 60 ml (4 tbsp) lemon juice
  • Salt and pepper to taste

    Preparation

    1. In a hot frying pan, sear the sea bream fillets in olive oil for 2 minutes on each side. Season with salt and pepper and set aside on a plate.
    2. In the same pan, sauté the onion.
    3. Add the beans, olives, herbes de Provence and garlic, deglaze with white wine and cook for 5 minutes over medium heat. Check seasoning.
    4. Arrange the sea bream fillets in the pan on top of the vegetables, sprinkle with lemon juice and cook for a further 5 minutes.
