Ingredients
- 4 to 8 grey or king bream fillets
- 120 ml (8 tbsp.) olive oil
- 1 onion, thinly sliced
- 500 ml (2 cups) green beans
- 250 ml (1 cup) black olives
- 15 ml (1 tbsp.) herbes de Provence blend
- 2 garlic cloves, chopped
- 125 ml (½ cup) white wine
- 60 ml (4 tbsp) lemon juice
- Salt and pepper to taste
Preparation
- In a hot frying pan, sear the sea bream fillets in olive oil for 2 minutes on each side. Season with salt and pepper and set aside on a plate.
- In the same pan, sauté the onion.
- Add the beans, olives, herbes de Provence and garlic, deglaze with white wine and cook for 5 minutes over medium heat. Check seasoning.
- Arrange the sea bream fillets in the pan on top of the vegetables, sprinkle with lemon juice and cook for a further 5 minutes.
