GREEK-STYLE PORK TENDERLOIN
Portions : 4 - Preparation and marinating : 35 minutes to 12 hours - Cooking time : 16 minutes
Ingredients
- 1 Québec pork tenderloin
- 125 ml (1/2 cup) olive oil
- 15 ml (1 tablespoon) dried oregano
- 15 ml (1 tbsp.) thyme
- 2 lemons, juice
- 15 ml (1 tbsp.) sugar
- 5 ml (1 tsp.) coriander seeds, ground
- 3 garlic cloves, chopped
- ½ red onion, chopped
- salt and pepper to taste
Topping
- 4 portions roasted potatoes
- 120 ml (8 tbsp.) Tzatziki sauce
- 4 portions Greek salad (tomatoes, olives, feta, lettuce, red onion, etc.)
Preparation
- Preheat barbecue to maximum.
- In a bowl, using a hand blender, puree olive oil, oregano, thyme, lemon juice, sugar, coriander, garlic, onion, salt and pepper until smooth.
- Cut the pork tenderloin in half and marinate in the prepared mixture in the refrigerator for 30 minutes to 12 hours, depending on the time available.
- On the barbecue grill, sear the meat for 3 minutes on each side, then continue cooking for 10 minutes, indirectly, with the lid closed.
- Wrap meat in aluminum foil and let rest for 5 minutes.
- Serve with roasted potatoes, Tzatziki sauce and a Greek salad.
