Greek-style pork tenderloin

GREEK-STYLE PORK TENDERLOIN

Portions : 4 - Preparation and marinating : 35 minutes to 12 hours - Cooking time : 16 minutes

Ingredients

  • 1 Québec pork tenderloin
  • 125 ml (1/2 cup) olive oil
  • 15 ml (1 tablespoon) dried oregano
  • 15 ml (1 tbsp.) thyme
  • 2 lemons, juice
  • 15 ml (1 tbsp.) sugar
  • 5 ml (1 tsp.) coriander seeds, ground
  • 3 garlic cloves, chopped
  • ½ red onion, chopped
  • salt and pepper to taste

Topping

  • 4 portions roasted potatoes
  • 120 ml (8 tbsp.) Tzatziki sauce
  • 4 portions Greek salad (tomatoes, olives, feta, lettuce, red onion, etc.)

Preparation

  1. Preheat barbecue to maximum.
  2. In a bowl, using a hand blender, puree olive oil, oregano, thyme, lemon juice, sugar, coriander, garlic, onion, salt and pepper until smooth.
  3. Cut the pork tenderloin in half and marinate in the prepared mixture in the refrigerator for 30 minutes to 12 hours, depending on the time available.
  4. On the barbecue grill, sear the meat for 3 minutes on each side, then continue cooking for 10 minutes, indirectly, with the lid closed.
  5. Wrap meat in aluminum foil and let rest for 5 minutes.
  6. Serve with roasted potatoes, Tzatziki sauce and a Greek salad.
