Banana Bread-Style Granola

Ingredients

  • 750 ml (3 cups) old-fashioned rolled oats
  • 125 ml (½ cup) pecans, coarsely chopped
  • 125 ml (½ cup) walnuts, coarsely chopped
  • 60 ml (¼ cup) pumpkin seeds
  • 5 ml (1 teaspoon) ground cinnamon
  • 1 ml (¼ teaspoon) ground nutmeg
  • 1 pinch of salt
  • 1 large, very ripe banana, mashed
  • 60 ml (¼ cup) maple syrup
  • 45 ml (3 tablespoons) coconut oil, melted
  • 5 ml (1 teaspoon) vanilla extract
  • 125 ml (½ cup) dark chocolate chips

Preparation

  1. Preheat the oven to 160 °C (325 °F). Line a baking sheet with parchment paper.
  2. In a bowl, combine the rolled oats, pecans, walnuts, pumpkin seeds, cinnamon, nutmeg, and salt.
  3. In another bowl, mix together the banana, maple syrup, coconut oil, and vanilla.
  4. Pour the banana mixture over the dry ingredients and stir until everything is well coated.
  5. Spread the granola evenly on the baking sheet. Press down lightly with a spatula to help form large clumps.
  6. Bake for 30 to 35 minutes, gently turning the granola halfway through baking, until it is golden brown.
  7. Let it cool completely on the baking sheet without touching it. The granola will become crispier as it cools.
  8. Add the dark chocolate chips and mix gently.
