Ingredients
- 750 ml (3 cups) old-fashioned rolled oats
- 125 ml (½ cup) pecans, coarsely chopped
- 125 ml (½ cup) walnuts, coarsely chopped
- 60 ml (¼ cup) pumpkin seeds
- 5 ml (1 teaspoon) ground cinnamon
- 1 ml (¼ teaspoon) ground nutmeg
- 1 pinch of salt
- 1 large, very ripe banana, mashed
- 60 ml (¼ cup) maple syrup
- 45 ml (3 tablespoons) coconut oil, melted
- 5 ml (1 teaspoon) vanilla extract
- 125 ml (½ cup) dark chocolate chips
Preparation
- Preheat the oven to 160 °C (325 °F). Line a baking sheet with parchment paper.
- In a bowl, combine the rolled oats, pecans, walnuts, pumpkin seeds, cinnamon, nutmeg, and salt.
- In another bowl, mix together the banana, maple syrup, coconut oil, and vanilla.
- Pour the banana mixture over the dry ingredients and stir until everything is well coated.
- Spread the granola evenly on the baking sheet. Press down lightly with a spatula to help form large clumps.
- Bake for 30 to 35 minutes, gently turning the granola halfway through baking, until it is golden brown.
- Let it cool completely on the baking sheet without touching it. The granola will become crispier as it cools.
- Add the dark chocolate chips and mix gently.
