CREAMY OYSTERS WITH WHITE WINE
Portions : 4 - Preparation : 5 minutes - Cooking : 5 minutes
Ingredients
- 45 ml (3 tablespoons) butter
- 45 ml (3 tablespoons) flour
- 1 shallot, chopped
- 1 sprig thyme
- 250 ml (1 cup) white wine
- 250 ml (1 cup) milk
- 1 lemon, juice
- 2 dozen oysters, opened
- Salt and pepper to taste
Preparation
- Melt butter in a saucepan. Add the flour, shallot and thyme and cook, stirring, for 2 minutes.
- Add the white wine to deglaze. Then add the milk and, using a whisk, stir to thicken the sauce, adding salt and pepper. Check the seasoning.
- Remove the sprig of thyme. Add the lemon juice and pour the sauce over the oysters.
