Creamy oysters with white wine

CREAMY OYSTERS WITH WHITE WINE

Portions : 4 - Preparation : 5 minutes - Cooking : 5 minutes

Ingredients

  • 45 ml (3 tablespoons) butter
  • 45 ml (3 tablespoons) flour
  • 1 shallot, chopped
  • 1 sprig thyme
  • 250 ml (1 cup) white wine
  • 250 ml (1 cup) milk
  • 1 lemon, juice
  • 2 dozen oysters, opened
  • Salt and pepper to taste

Preparation

  1. Melt butter in a saucepan. Add the flour, shallot and thyme and cook, stirring, for 2 minutes.
  2. Add the white wine to deglaze. Then add the milk and, using a whisk, stir to thicken the sauce, adding salt and pepper. Check the seasoning.
  3. Remove the sprig of thyme. Add the lemon juice and pour the sauce over the oysters.
