Mussels au gratin

MUSSELS AU GRATIN

Portions : 4 - Preparation : 20 minutes - Cooking time : 8 to 12 minutes

Ingredients

  • 1 bag fresh mussels
  • 125 ml (1/2 cup) olive oil or melted butter
  • 60 ml (4 tablespoons) grey shallot, finely chopped
  • 5 ml (1 tsp.) Thai chili, membranes and seeds removed, finely chopped
  • 60 ml (4 tbsp.) parsley leaves, finely chopped
  • 30 ml (2 tbsp.) honey
  • 1 lemon, juice
  • 60 ml (4 tbsp.) panko or bread crumbs
  • salt and pepper to taste

Preparation

  1. Preheat barbecue to maximum.
  2. Place mussels on grill, close barbecue lid and wait 2 minutes.
  3. As soon as the mussels have opened, remove from the heat.
  4. Shell each mussel, keeping only the shell half that contains the mollusc.
  5. In a bowl, combine the olive oil, shallot, chilli, parsley, honey, lemon juice, breadcrumbs, salt and pepper. Check seasoning.
  6. Divide the prepared mixture between the molds.
  7. Place the mussels on a barbecue-safe plate and cook over indirect heat, with the lid closed, for 8 to 10 minutes.
  8. Serve warm.
