MILK CHOCOLATE MOUSSE
Portions : 4 - Preparation time : 25 minutes - Chilling time : 4 hours - Cooking time : about 10 minutesIngredients
- 250 ml (1 cup) milk chocolate
 - 125 ml (1/2 cup) 35% cream
 - 4 eggs, whites and yolks separated
 - 1 pinch salt
 - 45 ml (3 tablespoons) sugar
 
Preparation
- In a double boiler, melt the chocolate in the cream.
 - Meanwhile, in a bowl, using a hand mixer or wire whisk, beat the egg whites and pinch of salt until stiff.
 - In another bowl, using a hand mixer or whisk attachment, whip the egg yolks, then fold in the sugar.
 - Add the chocolate to the egg yolk mixture.
 - Using a spatula, gently fold in the egg whites.
 - Fill jars or verrines and chill in the fridge for 4 hours before serving and decorating.
