Black Forest chocolate mousse

CHOCOLATE MOUSSE

Portions : 4 to 6 - Preparation time : 30 minutes - Freezing time : 3 hours

Ingredients

  • 125 g (4 1/2 oz) Cacao Barry dark chocolate
  • 2 eggs, yolks
  • 375 ml (1 ½ cups) 35% cream
  • 1 pinch salt
  • 15 ml (1 tablespoon) butter

Preparation

  1. Melt the chocolate and butter in a double boiler.
  2. Meanwhile, in a bowl, using a whisk, beat the egg yolks, add the cream and salt and whisk until stiff.
  3. Once the chocolate has melted, leave to cool on the work surface for a few minutes, stirring occasionally.
  4. Then fold the melted, cooled chocolate into the whipped cream and pour into silicone moulds.
  5. Set aside in the freezer for 3 hours before unmolding.

MASCARPONE CREAM.

Portions : 4 to 6 - Preparation time : 30 minutes - Freezing time : 3 hours

Ingredients

  • 4 eggs, 4 yolks and 2 whites
  • 125 ml (1/2 cup) sugar
  • 1 pinch salt
  • 250 ml (1 cup) mascarpone cheese
  • 250 ml (1 cup) cherries, chopped

Preparation

  1. Whisk egg whites in a bowl with a pinch of salt.
  2. In another bowl, whisk the egg yolks, then add the sugar and whisk for at least 2 minutes. Add the mascarpone and whisk until smooth.
  3. Add the cherries.
  4. Using a spatula, fold in the egg whites.
  5. Pour into silicone molds and freeze.
