CHOCOLATE MOUSSE
Portions : 4 to 6 - Preparation time : 30 minutes - Freezing time : 3 hours
Ingredients
- 125 g (4 1/2 oz) Cacao Barry dark chocolate
 - 2 eggs, yolks
 - 375 ml (1 ½ cups) 35% cream
 - 1 pinch salt
 - 15 ml (1 tablespoon) butter
 
Preparation
- Melt the chocolate and butter in a double boiler.
 - Meanwhile, in a bowl, using a whisk, beat the egg yolks, add the cream and salt and whisk until stiff.
 - Once the chocolate has melted, leave to cool on the work surface for a few minutes, stirring occasionally.
 - Then fold the melted, cooled chocolate into the whipped cream and pour into silicone moulds.
 - Set aside in the freezer for 3 hours before unmolding.
 
MASCARPONE CREAM.

Ingredients
- 4 eggs, 4 yolks and 2 whites
 - 125 ml (1/2 cup) sugar
 - 1 pinch salt
 - 250 ml (1 cup) mascarpone cheese
 - 250 ml (1 cup) cherries, chopped
 
Preparation
- Whisk egg whites in a bowl with a pinch of salt.
 - In another bowl, whisk the egg yolks, then add the sugar and whisk for at least 2 minutes. Add the mascarpone and whisk until smooth.
 - Add the cherries.
 - Using a spatula, fold in the egg whites.
 - Pour into silicone molds and freeze.
