Nachos with bread croutons and cheese

Ingredients

  • 2 Artesano Roasted Garlic Baguettes
  • 75 ml (5 tablespoons) melted garlic butter
  • 125 ml (1/2 cup) corn kernels
  • 250 ml (1 cup) shredded Tex-Mex cheese
  • 1/2 cup sliced olives
  • 4 tomatoes, diced
  • 1/4 bunch parsley, chopped
  • 4 jalapeños, thinly sliced
  • 1/2 cup chopped bacon
  • 1/2 cup sliced green onions

Toppings

  • Sour cream
  • Salsa
  • Hot sauce
  • Guacamole

Preparation

  1. Preheat the oven to 200°C (400°F) with the rack in the middle.
  2. Cut the baguettes into 1/2" thick slices.
  3. On a baking sheet lined with parchment paper or a silicone mat, spread out the bread slices, brush them with garlic butter, and bake for 8 minutes, until lightly toasted.
  4. In a baking dish, layer the bread slices, corn kernels, grated cheese, olives, tomatoes, parsley, jalapeños, and bacon, alternating between each ingredient. Top with grated cheese and bake for 10 minutes.
  5. Serve hot with sour cream, salsa, hot sauce, or guacamole.
