Ingredients
- 2 Artesano Roasted Garlic Baguettes
- 75 ml (5 tablespoons) melted garlic butter
- 125 ml (1/2 cup) corn kernels
- 250 ml (1 cup) shredded Tex-Mex cheese
- 1/2 cup sliced olives
- 4 tomatoes, diced
- 1/4 bunch parsley, chopped
- 4 jalapeños, thinly sliced
- 1/2 cup chopped bacon
- 1/2 cup sliced green onions

- Hot sauce
- Guacamole
Preparation
- Preheat the oven to 200°C (400°F) with the rack in the middle.
- Cut the baguettes into 1/2" thick slices.
- On a baking sheet lined with parchment paper or a silicone mat, spread out the bread slices, brush them with garlic butter, and bake for 8 minutes, until lightly toasted.
- In a baking dish, layer the bread slices, corn kernels, grated cheese, olives, tomatoes, parsley, jalapeños, and bacon, alternating between each ingredient. Top with grated cheese and bake for 10 minutes.
- Serve hot with sour cream, salsa, hot sauce, or guacamole.
