Gingerbread and fresh goat's cheese dome, fig jam

GINGERBREAD AND FRESH GOAT CHEESE DOME, FIG JAM

Portions : 4 - Preparation time : 20 minutes - Freezing time : 3 hours

Ingredients

  • 500 ml (2 cups) fresh goat's cheese
  • 1 garlic clove, chopped
  • 45 ml (3 tablespoons) white balsamic vinegar
  • 4 red peppers, roasted, brunoise style
  • 8 slices gingerbread
  • qs fig jam
  • Salt and pepper to taste
  • 1 silicone mold, in half-spheres

Preparation

  1. In a bowl, combine fresh goat's cheese, garlic, vinegar, salt and pepper. Check seasoning.
  2. Fill the silicone mold with the prepared mixture and set aside in the freezer for 3 hours.
  3. In a bowl, season roasted peppers with salt and pepper.
  4. Cut the gingerbread slices into disks the size of the half-spheres in the mold.
  5. Using a spoon, lightly scoop out the roasted peppers from the inside of each goat's cheese half-sphere.
  6. On each gingerbread disc, place an unmolded half-sphere and decorate to taste.
