Ingredients
- 150 g (1 ½ cups) oat flour
- 50 g (½ cup) vanilla protein powder
- 5 ml (1 tsp) baking powder
- 2.5 ml (½ tsp) baking soda
- 1 pinch of salt
- 2 eggs
- 180 g (¾ cup) plain Greek yogurt
- 125 ml (½ cup) milk
- 60 ml (¼ cup) maple syrup
- 30 ml (2 tablespoons) vegetable oil or melted butter
- 5 ml (1 teaspoon) vanilla extract
- 85 g (½ cup) chocolate chips or chunks
- 180 ml (¾ cup) mini marshmallows, divided
- 125 ml (½ cup) graham crackers, coarsely crumbled, divided
Preparation
- Preheat the oven to 180 °C (350 °F). Line a loaf pan with parchment paper.
- In a bowl, combine the oat flour, protein powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, yogurt, milk, maple syrup, oil, and vanilla.
- Pour the wet ingredients over the dry ingredients and mix just enough to combine.
- Stir in the chocolate, half of the mini marshmallows, and two-thirds of the graham crackers. Mix gently.
- Pour the batter into the pan. Top with the remaining mini marshmallows and graham crackers.
- Bake for 45 to 50 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. If the marshmallows brown too quickly, cover loosely with aluminum foil toward the end of baking.
- Let cool for 15 minutes before removing from the pan, then let cool completely on a wire rack before slicing.
