Protein S'mores Bread

Ingredients

  • 150 g (1 ½ cups) oat flour
  • 50 g (½ cup) vanilla protein powder
  • 5 ml (1 tsp) baking powder
  • 2.5 ml (½ tsp) baking soda
  • 1 pinch of salt
  • 2 eggs
  • 180 g (¾ cup) plain Greek yogurt
  • 125 ml (½ cup) milk
  • 60 ml (¼ cup) maple syrup
  • 30 ml (2 tablespoons) vegetable oil or melted butter
  • 5 ml (1 teaspoon) vanilla extract
  • 85 g (½ cup) chocolate chips or chunks
  • 180 ml (¾ cup) mini marshmallows, divided
  • 125 ml (½ cup) graham crackers, coarsely crumbled, divided

Preparation

  1. Preheat the oven to 180 °C (350 °F). Line a loaf pan with parchment paper.
  2. In a bowl, combine the oat flour, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, yogurt, milk, maple syrup, oil, and vanilla.
  4. Pour the wet ingredients over the dry ingredients and mix just enough to combine.
  5. Stir in the chocolate, half of the mini marshmallows, and two-thirds of the graham crackers. Mix gently.
  6. Pour the batter into the pan. Top with the remaining mini marshmallows and graham crackers.
  7. Bake for 45 to 50 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. If the marshmallows brown too quickly, cover loosely with aluminum foil toward the end of baking.
  8. Let cool for 15 minutes before removing from the pan, then let cool completely on a wire rack before slicing.
