PAN BAGNAT - NIÇOIS TUNA SANDWICH

Ingredients
- 200 g (7 oz) canned tuna in oil
- 120 ml (8 tablespoons) olive oil
- 60 ml (4 tablespoons) red wine vinegar
- 2 garlic cloves, chopped
- 12 black olives, pitted and sliced
- ½ red onion, thinly sliced
- 2 tomatoes, sliced
- 4 Ciabatta rolls
- 4 hard-boiled eggs, sliced
- 4 radishes, sliced
- 250 ml (1 cup) arugula
- Salt and pepper to taste
Preparation
- Mix the tuna, oil, vinegar, garlic, olives, onion and tomatoes in a bowl and season to taste.
- Open the breads in half and spread the mixture over the sandwiches, along with the eggs, radish slices and arugula. Pour the remaining vinaigrette from the bottom of the bowl over the sandwiches and close the sandwiches.
