Great pancake recipe, perfect for Sunday brunch!
Ingredients (for about 15 pancakes)
- 190 g of flour
- 5 ml baking powder
- 15 ml of sugar
- 2 pinches of salt
- 1 cup buttermilk
- 2 eggs
- 80 g melted unsalted butter
- 15 ml vanilla extract
- 1 cup fresh blueberries
- Maple syrup for tasting
Preparation
- In a bowl, using a whisk, mix the flour, baking powder, salt and sugar.
- Add the buttermilk, eggs, melted butter, and vanilla. Mix until smooth.
- In a frying pan, heat a little vegetable oil. When the pan is very hot, pour in a small ladleful of batter.
- Place a few blueberries on the still-raw side of the pancake. After a few minutes, gently flip to cook the other side.
- Enjoy warm with maple syrup.
