Blueberry Pancakes

Great pancake recipe, perfect for Sunday brunch!

Ingredients (for about 15 pancakes)

  • 190 g of flour
  • 5 ml baking powder
  • 15 ml of sugar
  • 2 pinches of salt
  • 1 cup buttermilk
  • 2 eggs
  • 80 g melted unsalted butter
  • 15 ml vanilla extract
  • 1 cup fresh blueberries
  • Maple syrup for tasting

Preparation

  1. In a bowl, using a whisk, mix the flour, baking powder, salt and sugar.
  2. Add the buttermilk, eggs, melted butter, and vanilla. Mix until smooth.
  3. In a frying pan, heat a little vegetable oil. When the pan is very hot, pour in a small ladleful of batter.
  4. Place a few blueberries on the still-raw side of the pancake. After a few minutes, gently flip to cook the other side.
  5. Enjoy warm with maple syrup.
