P TES WITH ASPARAGUS, WALNUTS AND BASIL
Portions : 4 - Preparation : 10 minutes - Cooking time : about 10 minutes
Ingredients
- 1 bunch asparagus
 - 60 ml (4 tablespoons) olive oil
 - 1 clove garlic, minced
 - 45 ml (3 tbsp.) balsamic vinegar
 - 15 ml (1 tbsp.) pink pepper, cracked
 - 125 ml (1/2 cup) vegetable stock
 - 125 ml (1/2 cup) 15% cream
 - 125 ml (1/2 cup) panko breadcrumbs
 - 125 ml (1/2 cup) walnuts, coarsely chopped
 - 90 ml (6 tablespoons) basil leaves, chopped
 - 4 portions al dente pasta
 - Salt and pepper to taste
 
Preparation
- Trim asparagus stems to 1/4 length, then cut remaining asparagus stalks into 1/2" thick slices.
 - In a hot pan, sauté the asparagus in a little oil for 2 to 3 minutes.
 - Add garlic, balsamic vinegar, pink peppercorns, stock and cream and simmer for 2 to 3 minutes. Check seasoning.
 - Add the basil and pasta, stirring and, if necessary, adding a little pasta cooking water to obtain a nice, smooth, coating sauce.
 - Meanwhile, in a separate frying pan, brown the breadcrumbs and walnuts for 2-3 minutes, until golden and crisp.
 - Divide the pasta and sauce between the plates, then place the walnut and panko mixture on top.
