Cook time: 3 to 5 minutes in a pizza oven or 10 to 15 minutes in a conventional oven

Ingredients

  • 1 ball of JG pizza dough
  • 15 ml (1 tbsp) olive oil
  • 300 g beef sirloin
  • 125 ml (½ cup) mayonnaise
  • 125 ml (½ cup) grated carrot
  • 125 ml (½ cup) cucumber, julienned
  • 60 ml (¼ cup) fresh cilantro
  • 15 ml (1 tbsp) toasted sesame seeds
  • Salt and pepper to taste

Asian glaze

30 ml (2 tbsp) soy sauce
30 ml (2 tbsp) honey
15 ml (1 tbsp) sesame oil
15 ml (1 tbsp) rice vinegar
1 clove garlic, minced
5 ml (1 tsp) fresh grated ginger

Preparation

  1. Remove the JG pizza dough from the refrigerator after letting it rest for 24 hours, and let it come to room temperature for 1 to 2 hours on the counter.
  2. Roll out the dough into a large round or oval shape.
  3. Pour the olive oil into the center, then fold the dough over itself to form a tightly sealed sandwich.
  4. Bake in a preheated pizza oven for 3 to 5 minutes, until the dough is well puffed, golden brown, and cooked through, or bake in an oven preheated to 550°F for 10 to 15 minutes.
  5. Mix the ingredients for the Asian glaze.
  6. Brush the sirloin generously with the glaze and grill it on the barbecue or in a very hot skillet.
  7. While cooking, brush the meat again with the glaze.
  8. Let rest for a few minutes, then slice thinly.
  9. Once out of the oven, carefully open the bun.
  10. Spread mayonnaise on the inside, add the steak slices, carrot, cucumber, and cilantro.
  11. Drizzle with the remaining glaze if desired, garnish with sesame seeds, season with salt and pepper to taste, then serve immediately.
