SWEET AND SOUR CHICKEN
Portions : 4 - Preparation : 15 minutes - Cooking : 15 to 20 minutes
Ingredients
- 3 Québec chicken breasts
- 1 onion, chopped
- 1 garlic clove, chopped
- 500 ml (2 cups) snow peas
- 60 ml (4 tbsp.) soy sauce
- 5 ml (1 teaspoon) Sambal oelek
- 125 ml (½ cup) tomato sauce
- 60 ml (4 tablespoons) rice vinegar (or white wine)
- 60 ml (4 tbsp.) honey
- 250 ml (1 cup) flour
- 4 eggs, beaten with a fork
- 250 ml (1 cup) Panko breadcrumbs
- Qs canola oil
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- On a baking sheet lined with parchment paper or a silicone mat, arrange the chicken breasts and bake for 10 minutes.
- Meanwhile, in a hot pan, sauté the onion and garlic in a little fat.
- Add the snow peas, soy sauce, Sambal Oelek, tomato sauce, vinegar and honey and cook for 5 minutes. Check seasoning.
- Prepare 3 bowls, one for the flour, one for the eggs and one for the breadcrumbs.
- Cut chicken into cubes (some pieces may not be fully cooked).
- Roll the chicken cubes in the flour, then in the egg and finally in the breadcrumbs.
- Heat 1" of canola oil in a skillet and fry chicken pieces until nicely colored.
- Divide the chicken cubes between the plates and cover with the sauce.
