Sweet and sour chicken

SWEET AND SOUR CHICKEN

Portions : 4 - Preparation : 15 minutes - Cooking : 15 to 20 minutes

Ingredients

  • 3 Québec chicken breasts
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 500 ml (2 cups) snow peas
  • 60 ml (4 tbsp.) soy sauce
  • 5 ml (1 teaspoon) Sambal oelek
  • 125 ml (½ cup) tomato sauce
  • 60 ml (4 tablespoons) rice vinegar (or white wine)
  • 60 ml (4 tbsp.) honey
  • 250 ml (1 cup) flour
  • 4 eggs, beaten with a fork
  • 250 ml (1 cup) Panko breadcrumbs
  • Qs canola oil

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. On a baking sheet lined with parchment paper or a silicone mat, arrange the chicken breasts and bake for 10 minutes.
  3. Meanwhile, in a hot pan, sauté the onion and garlic in a little fat.
  4. Add the snow peas, soy sauce, Sambal Oelek, tomato sauce, vinegar and honey and cook for 5 minutes. Check seasoning.
  5. Prepare 3 bowls, one for the flour, one for the eggs and one for the breadcrumbs.
  6. Cut chicken into cubes (some pieces may not be fully cooked).
  7. Roll the chicken cubes in the flour, then in the egg and finally in the breadcrumbs.
  8. Heat 1" of canola oil in a skillet and fry chicken pieces until nicely colored.
  9. Divide the chicken cubes between the plates and cover with the sauce.
