Roast pork shoulder with horseradish and honey

Ingredients

    • 1 beef chuck roast (approx. 2kg)
    • 60 ml (4 tablespoons) concentrated beef broth
    • 90 ml (6 tbsp) olive oil
    • 1 onion, thinly sliced
    • 4 garlic cloves, chopped
    • 60 ml (4 tbsp.) horseradish
    • 125 ml (1/2 cup) honey
    • 60 ml (4 tbsp) Montreal steak spice blend
    • 1l (4 cups) dark beer
    • salt and pepper to taste

Preparation

    1. Preheat oven, rack in center, to 160°C (325°F).
    2. In a hot skillet, sear the beef in a little oil for 2 to 3 minutes on each side.
    3. Place meat in an ovenproof dish, add broth, onion, garlic, horseradish, honey, steak spices and beer, cover and bake for 4 hours.
    4. Serve with potatoes and greens.
