Double-smoked salmon salad with pepper, feta, and avocado

Ingredients

  • 1 package of double-smoked pepper salmon (140g)
  • 30 ml (2 tbsp) lemon balsamic vinaigrette
  • 1 ripe avocado, diced
  • 125 ml (½ cup) cherry tomatoes, finely diced
  • 60 ml (¼ cup) sliced black olives
  • ½ cup crumbled feta cheese
  • Salt and pepper to taste
  • 2 handfuls of lettuce

Preparation

  1. In a bowl, combine the avocado, tomatoes, and black olives.
  2. Add the double-smoked pepper-cured smoked salmon and crumbled feta.
  3. Drizzle with vinaigrette and season with salt and pepper.
  4. Gently toss to coat the ingredients.
  5. Serve the salad on a bed of lettuce.
