Banh Mi-Style Salad

Salade style Banh Mi

Ingredients

  • 1 package (420 g) ginger and soy pork stew
  • 1 cucumber, sliced
  • 1 carrot, julienned
  • 30 ml (2 tbsp) rice vinegar
  • 2.5 ml (½ tsp) sesame oil
  • 60 ml (¼ cup) water
  • 15 ml (1 tbsp) spicy honey
  • ½ cup croutons
  • ¼ cup cilantro
  • 2.5 ml (½ tsp) olive oil
  • 30 ml (2 tbsp) spicy mayonnaise
  • 250 ml (1 cup) lettuce
  • Sesame seeds for garnish

Preparation

  1. In a bowl, combine the julienned carrots, sliced cucumber, rice vinegar, sesame oil, and spicy honey.
  2. Let marinate for at least 15 minutes, then drain.
  3. Reheat the pork stew in a skillet over medium heat for about 5 minutes.
  4. In a bowl, add the croutons, olive oil, and cilantro, and mix well.
  5. Place the lettuce in a bowl, add the marinated vegetables and the cilantro croutons.
  6. Drizzle with spicy mayonnaise
