Ingredients
- 4 panini rolls, ciabatta rolls, or small baguettes
- 250 ml (1 cup) baby arugula
- 1 apple or pear, thinly sliced
- 150 g (5 oz) sharp cheddar cheese, sliced
- 15 ml (1 tbsp) olive oil
- 4 large Quebec pork cutlets, 150 g (1/3 lb) each
- 2.5 to 5 ml (1/2 to 1 tsp) paprika
- Salt and freshly ground black pepper, to taste
Preparation
- Cut the bread rolls in half lengthwise. Open them up and fill with arugula, apple or pear slices, and cheddar. Set aside.
- In a skillet, heat the olive oil over high heat. Cook the pork cutlets for 1 to 2 minutes on each side, depending on their thickness, until cooked through. Sprinkle with paprika, then season generously with salt and pepper.
- Place the pork cutlets inside the filled buns and close the sandwiches.
- Heat a large skillet over medium-high heat.
- Place the sandwiches in the skillet and brown them on each side, pressing them down lightly with a spatula, until the bread is crispy and the cheese is melted. Serve hot.
