OVEN-ROASTED SALMON AND VEGETABLES
Portions : 4 to 6 - Preparation : 5 minutes - Cooking : 20 minutes
Ingredients
- 1 whole salmon fillet, halved
- ½ broccoli, in pieces
- ½ cauliflower, in pieces
- 1 onion, thinly sliced
- 2 garlic cloves, chopped
- 120 ml (8 tablespoons) olive oil
- 90 ml (6 tbsp.) white balsamic vinegar
- 2 pinches oregano
- 60 ml (4 tablespoons) maple syrup
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 220°C (425°F).
- In a bowl, combine garlic, oil, vinegar, oregano, maple syrup, salt and pepper. Check seasoning.
- Add onion, broccoli and cauliflower pieces to coat.
- On a baking sheet lined with parchment paper or a silicone mat, spread out the vegetables.
- Arrange the salmon in the middle of the vegetables, adding salt, pepper and the rest of the mixture that has coated the vegetables.
- Bake for 20 minutes. Then broil for 2 minutes.
