BEEF AND WHITE BEAN SHORT RIBS

- 4 beef short ribs
 - 60 ml (4 tablespoons) olive oil
 - 1 onion, thinly sliced
 - 500 ml (2 cups) red wine
 - 30 ml (2 tbsp.) tomato paste
 - 500 ml (2 cups) beef broth
 - 30 ml (2 tbsp.) Worcestershire sauce
 - 125 ml (1/2 cup) maple syrup
 - 15 ml (1 tbsp.) sweet paprika
 - 15 ml (1 tbsp.) cumin seeds, ground
 - 15 ml (1 tbsp.) coriander seeds, ground
 - 30 ml (2 tbsp.) ginger, chopped
 - 2 garlic cloves, chopped
 - 500 ml (2 cups) white beans
 
Toppings
- Carrot and parsnip purée
 - French fries
 - Sautéed green beans
 
Preparation
- Preheat oven, rack in center, to 160°C (325°F).
 - Heat olive oil in a casserole dish, add short ribs and brown on both sides for two to three minutes.
 - Add the onion, continue cooking for 2 minutes, then deglaze with the red wine.
 - Add tomato paste, beef stock, Worcestershire sauce, paprika, cumin, coriander, ginger and garlic, bring to the boil and bake for 3 hours.
 - Add the beans and cook for a further 1 hour.
 - Check seasoning before serving.
