APPLE AND ALMOND TART
Portions : 4 - Preparation time : 10 minutes - Cooking time : 30 minutes
Ingredients
- 3 eggs, 2 whole + 1 yolk
- 125 g (4 1/2 oz) sugar
- 1 pinch salt
- 125 g (4 1/2 oz) unsalted butter, soft
- 15 ml (1 tablespoon) Amaretto
- 1 lemon, zest
- 125 gr (4 1/2 oz) almond powder
- 3 ml (1/2 tsp.) bitter almond extract
- 1 shortcrust pastry base
- 3 Granny Smith apples, sliced
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- Whisk the eggs in a bowl, then add the sugar. Whisk for at least 2 minutes, the time needed to whiten the eggs. The sugar should no longer crack under the tooth, and the mixture should end up frothy.
- Using a spatula, fold in the salt, butter, Amaretto, zest, almond powder and bitter almond extract.
- Roll out the shortcrust pastry on the work surface and place in a buttered mould.
- Pour the prepared mixture into the tin.
- Arrange the apple slices on top.
- Bake for 30 minutes.
