Apple and almond tart

APPLE AND ALMOND TART

Portions : 4 - Preparation time : 10 minutes - Cooking time : 30 minutes

Ingredients

  • 3 eggs, 2 whole + 1 yolk
  • 125 g (4 1/2 oz) sugar
  • 1 pinch salt
  • 125 g (4 1/2 oz) unsalted butter, soft
  • 15 ml (1 tablespoon) Amaretto
  • 1 lemon, zest
  • 125 gr (4 1/2 oz) almond powder
  • 3 ml (1/2 tsp.) bitter almond extract
  • 1 shortcrust pastry base
  • 3 Granny Smith apples, sliced

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. Whisk the eggs in a bowl, then add the sugar. Whisk for at least 2 minutes, the time needed to whiten the eggs. The sugar should no longer crack under the tooth, and the mixture should end up frothy.
  3. Using a spatula, fold in the salt, butter, Amaretto, zest, almond powder and bitter almond extract.
  4. Roll out the shortcrust pastry on the work surface and place in a buttered mould.
  5. Pour the prepared mixture into the tin.
  6. Arrange the apple slices on top.
  7. Bake for 30 minutes.
