TUNA TATAKI AND GREEN PEA SALAD

Ingredients
The tataki
- 1 to 2 tuna steaks
- 15 ml (1 tablespoon) mustard powder
- 15 ml (1 tbsp.) dill powder
- 15 ml (1 tbsp) onion powder
- 5 ml (1 tsp.) garlic powder
- 5 ml (1 tsp.) chili flakes
- 3 ml (1/2 tsp.) salt
- 15 ml (1 tbsp.) ground pepper
- 1 lemon, zest
- 60 ml (4 tbsp.) oil
Salad
- 500 ml (2 cups) green peas (blanched in boiling salted water)
- 2 green onion stalks, sliced
- 1 Granith Smith apple, diced
- 1/2 red onion, thinly sliced
- 75 ml (5 tbsp.) hummus
- 60 ml (4 tbsp.) olive oil
- 30 ml (2 tbsp.) white balsamic vinegar
- salt and pepper to taste
Preparation
- In a bowl, combine mustard powder, dill, onion, garlic, chili flakes, salt, pepper and lemon zest.
- Roll the tuna steaks in the spice mixture.
- In a hot pan, sear the tuna in a little oil, 45 seconds on each side. Remove and set aside. Then slice the tuna into thin strips.
- In a bowl, mix peas, green onion, apple, red onion, olive oil, vinegar and a little salt and pepper.
- Pour a dash of hummus onto each plate, then spread the prepared salad on top, followed by the tuna slices.
