BROWN TOFU
Portions : 4 - Preparation : 5 minutes - Cooking : 8 to 10 minutes
Ingredients
- 1 onion, chopped
- 60 ml (4 tablespoons) olive oil
- 1 red bell pepper, chopped
- 1 Jalapenos pepper, white membranes and seeds removed, diced
- 750 ml (3 cups) firm tofu, chopped
- 15 ml (1 tbsp.) turmeric, ground
- 60 ml (4 tablespoons) vegetable broth
- 12 cherry tomatoes, halved
- parsley for garnish
- bread slices, toasted
- salt and pepper to taste
Preparation
- In a hot frying pan, sauté the onion in olive oil for 2-3 minutes.
- Add the bell bell pepper and chili pepper and continue cooking for 2 minutes.
- Add the tofu, turmeric and stock and reduce to dryness over medium heat. Check seasoning.
- Add tomatoes and parsley to garnish.
- Serve with slices of toasted bread.
