Scrambled tofu

BROWN TOFU

Portions : 4 - Preparation : 5 minutes - Cooking : 8 to 10 minutes

Ingredients

  • 1 onion, chopped
  • 60 ml (4 tablespoons) olive oil
  • 1 red bell pepper, chopped
  • 1 Jalapenos pepper, white membranes and seeds removed, diced
  • 750 ml (3 cups) firm tofu, chopped
  • 15 ml (1 tbsp.) turmeric, ground
  • 60 ml (4 tablespoons) vegetable broth
  • 12 cherry tomatoes, halved
  • parsley for garnish
  • bread slices, toasted
  • salt and pepper to taste

Preparation

  1. In a hot frying pan, sauté the onion in olive oil for 2-3 minutes.
  2. Add the bell bell pepper and chili pepper and continue cooking for 2 minutes.
  3. Add the tofu, turmeric and stock and reduce to dryness over medium heat. Check seasoning.
  4. Add tomatoes and parsley to garnish.
  5. Serve with slices of toasted bread.
