Cherry tomatoes and smoked salmon on toast

CHERRY TOMATOES AND SMOKED SALMON TARTINE

Portions : 4 - Preparation : 10 minutes - Cooking : 20 minutes

Ingredients

  • 60 ml (4 tablespoons) olive oil
  • 1 lemon, zest
  • 2 thyme sprigs, leaves removed
  • 30 ml (2 tablespoons) honey
  • 1 sheet puff pastry
  • 12 cherry tomatoes
  • 6 slices smoked salmon, cut in 2
  • salt and freshly ground pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a bowl, combine oil, lemon zest, thyme, honey, salt and pepper. Check seasoning.
  3. On a work surface, cut puff pastry into 2" x 2" squares.
  4. On an ovenproof baking sheet lined with parchment paper or a silicone mat, arrange the pastry squares.
  5. On each square, place a piece of smoked salmon, then a tomato and sprinkle with a little of the prepared mixture. Bake for 20 minutes.
