Lettuce Wraps with Salmon, Poké-Style

Ingredients

  • 1 120-g package of salmon cubes for tartare
  • 250 ml (1 cup) cooked, cooled rice
  • 30 ml (2 tbsp) mayonnaise
  • 30 ml (2 tbsp) soy sauce
  • 15 ml (1 tbsp) sesame oil
  • 15 ml (1 tbsp) honey
  • 60 ml (1/4 cup) finely diced cucumber
  • 60 ml (1/4 cup) finely diced red bell pepper
  • 30 ml (2 tbsp) finely chopped red onion
  • 6 to 8 large leaves of Boston or romaine lettuce
  • 15 ml (1 tbsp) sesame seeds
  • Salt and pepper to taste


Preparation

  1. Squeeze the tube of cubed salmon into a bowl. Add the mayonnaise, 15 ml (1 tbsp) soy sauce, oil, honey, cucumber, red bell pepper, and red onion.
  2. Gently mix to coat the salmon without breaking it up.
  3. Place a small amount of cooked rice at the bottom of each lettuce leaf, then top with the salmon mixture. Drizzle with the remaining soy sauce and sprinkle with sesame seeds.
  4. Season with salt and pepper to taste, then serve immediately.
