Ingredients
- 1 100 g package smoked pastrami salmon, finely chopped
- 5 eggs
- 1/2 cup milk
- 1/2 cup sun-dried tomatoes, chopped
- 15 ml (1 tbsp.) butter
- 30 ml (2 tbsp.) fresh chives, snipped
- Salt and pepper to taste
Preparation
- In a bowl, combine eggs, milk, finely chopped salmon and sun-dried tomatoes.
- Season with salt and pepper.
- Heat the butter in a frying pan and pour over the egg mixture.
- Cook over medium heat until the omelette is set.
- At the end of cooking, add the fresh chives before folding the omelette and serve immediately.
