There are recipes that immediately bring back pleasant memories. Unique smells, aged images and a reassuring cocoon are all comforting.
Ingredients for 1 cake (22 cm / 8-inch pan)
- 1 kg apples, peeled and cut into small pieces
- 125 g sugar
- 125 g flour
- 3 whole eggs
- 15 ml vegetable oil
- 100 g milk
- 1 sachet vanilla sugar
- 10 ml baking powder
As an extra, we could add :
- 15 ml rum
- Citrus zest (lemon / orange / lime)
- Spices (cinnamon, 4-spice, Chinese 5-spice...)
And to serve:
We can even make a salted butter caramel (highly recommended for extra indulgence).
Preparation
- Preheat oven to 150°C or 300°F.
- Place all the ingredients (except the apples) in a mixing bowl and whisk to combine.
- Once the mixture is smooth, add the apple pieces and mix with a pastry blender.
- Grease a cake tin (butter + flour or PAM).
- Pour the apple mixture into the tin and place in the oven. The cake will bake for around 45 minutes.
- It should be golden-brown. Check doneness by pricking the tip of a knife in the middle of the cake. If it comes out dry, the cake is done.
- Remove from the oven and allow to cool before unmolding.
