Apple cake

There are recipes that immediately bring back pleasant memories. Unique smells, aged images and a reassuring cocoon are all comforting.

Ingredients for 1 cake (22 cm / 8-inch pan)

  • 1 kg apples, peeled and cut into small pieces
  • 125 g sugar
  • 125 g flour
  • 3 whole eggs
  • 15 ml vegetable oil
  • 100 g milk
  • 1 sachet vanilla sugar
  • 10 ml baking powder

As an extra, we could add :

  • 15 ml rum
  • Citrus zest (lemon / orange / lime)
  • Spices (cinnamon, 4-spice, Chinese 5-spice...)

And to serve:
We can even make a salted butter caramel (highly recommended for extra indulgence).

Preparation

  1. Preheat oven to 150°C or 300°F.
  2. Place all the ingredients (except the apples) in a mixing bowl and whisk to combine.
  3. Once the mixture is smooth, add the apple pieces and mix with a pastry blender.
  4. Grease a cake tin (butter + flour or PAM).
  5. Pour the apple mixture into the tin and place in the oven. The cake will bake for around 45 minutes.
  6. It should be golden-brown. Check doneness by pricking the tip of a knife in the middle of the cake. If it comes out dry, the cake is done.
  7. Remove from the oven and allow to cool before unmolding.
