Crispy Asian Beef

Bœuf croustillant à l'asiatique

Ingredients

  • 400 g (13 1/2 oz) fondue beef, sliced very thin
  • 60 ml (4 tbsp) cornstarch
  • 60 ml (4 tbsp) all-purpose flour
  • 2 ml (1/2 tsp) baking soda
  • 30 ml (2 tbsp) neutral cooking oil
  • (1) sliced green pepper
  • (2) garlic cloves, finely chopped
  • 15 ml (1 tbsp) fresh ginger, chopped
  • (1) small chopped chili pepper, or to taste
  • 30 ml (2 tbsp) sesame oil
  • 125 ml (1/2 cup) orange juice
  • 80 ml (1/3 cup) brown sugar or sugar
  • 45 ml (3 tbsp) soy sauce
  • 15 ml (1 tbsp) hot sauce (chili crisp)
  • salt and pepper to taste
  • cooked white or jasmine rice

Preparation

  1. In a bowl, mix the cornstarch, flour and bicarbonate.
  2. Coat the beef slices with this mixture, then shake them lightly to remove the excess.
  3. In a large, hot skillet or wok over high heat, in hot neutral oil, sear the beef in small batches until golden brown and slightly crispy. Remove and set aside.
  4. In the same hot pan, add the pepper, onion, garlic, ginger, chili, and let it cook for a few minutes.
  5. Add sesame oil, orange juice, brown sugar, soy sauce, hot sauce, mix then reduce to obtain a glossy and slightly syrupy sauce.
  6. Return the beef to the pan, coat well with the sauce, and serve immediately with hot rice.
