Ingredients
- 400 g breaded butterfly shrimp
- 8 tortillas
- 250 ml (1 cup) diced mango
- 250 ml (1 cup) cooked rice
- 250 ml (1 cup) shredded green cabbage or arugula
- 125 ml (1/2 cup) mayonnaise
- 15 ml (1 tbsp) hot sauce
- 15 ml (1 tbsp) lemon juice
- 15 ml (1 tbsp) oil
- Salt and pepper to taste
Preparation
- Cook the breaded butterfly shrimp in the oven or deep fryer according to package directions until crispy.
- Meanwhile, mix the mayonnaise with the hot sauce and lemon juice, then season to taste.
- Warm the tortillas for a few seconds in a skillet or in the microwave.
- Top each tortilla with a little rice, add the crispy shrimp, mango, cabbage, or arugula, then drizzle with spicy mayonnaise. Serve immediately.
